SAVORY VEGETABLE FRITTATA

6 eggs
1/2 cup roasted red peppers, coarsely chopped
1/4 cup half & half
1 cup sliced mushrooms
1/2 teaspoon salt
1/4 cup chopped green onion
1/4 teaspoon pepper
1/4 cup chopped parsley
1/2 cup shredded Asiago cheese
Prepared Basil Pesto for garnish

Preheat oven to 350 degrees. Beat eggs with a whisk to combine. Add cream, salt, pepper and cayenne.
Grease a 9-10 inch quiche dish or pie pan with cooking spray. Place roasted peppers, mushrooms, green onion,
parsley and cheese in the dish. Pour egg mixture over vegetables and bake for about 20-25 minutes.
Serve warm with a garnish of Pesto.
